Ingredients
Category | Item | Quantity |
Protein | Lean Ground Beef | 1 lb |
Base | Elbow Macaroni (dry) | 2 cups |
Liquids | Beef Broth | 2 ½ cups |
Canned | Tomato Sauce (8 oz) | 1 can |
Canned | Diced Tomatoes with Green Chilies | 1 can (14.5 oz) |
Veggie | Yellow Onion (diced) | 1 medium |
Spice | Chili Powder | 2 tbsp |
Spice | Cumin, Garlic Powder, Salt, Pepper | To taste |
Cheese | Shredded Sharp Cheddar | 2 cups |
Instructions
Brown the Beef: In a large pot or Dutch oven, brown the ground beef with the diced onion over medium-high heat. Drain any excess grease.
Season: Stir in the chili powder, cumin, and garlic powder. Let the spices toast with the meat for about a minute to wake up the flavors.
Simmer: Add the tomato sauce, diced tomatoes (don't drain them!), beef broth, and the dry macaroni.
Cook: Bring the mixture to a boil, then reduce heat to low. Cover and simmer for 12–15 minutes, or until the pasta is tender and most of the liquid has been absorbed.
The Grand Finale: Turn off the heat and stir in the shredded cheese until it's a melted, gooey masterpiece.
